We are so impressed with Colombia El Otono coffee beans, sourced from a 3 hectare farm near Gaitaina, Tolima.
The coffee was grown by Miguel Dominguez who is from an indigienous community called Nasa Wes’x. This coffee is so special because it was pulped right after picking, and fermented inside ceramic tanks without oxygen for 35 hours. It was then placed on raised beds and dried until it reached 10% moisture content.
Anaerobic processing, where coffee is fermented without oxygen, produces extremely rare and unique flavours. Colombia El Otono is a stunning combination of rich and complex red fruit flavours and a brown sugar finish.
